Katchri Power is made from a small brownish-yellow melon indigenous to Rajasthan. It is used as a tenderizer, but also adds a tangy flavor. Katchri Chutney is a tart condiment (one of their trademark dishes). I found out about this spice through Gordon Ramsey's Great Escape, where he traveled to Rajasthan to make a 300 year recipe called Khud Khargosh made with goat.
